About Me

I'm Mandii. I love to read blogs, but one of my favorite parts of reading other blogs is the "About Me" section. I always love to know the person behind the blog. I'm taking my inspiration in my "About Me" section from my local newspaper. I hope these questions will give you a sense of who I am. In short, my faith, family, and friends mean the world to me.

  • The star who would play me in the movie version of my life: Looks wise, Renee Zellweger. Personality wise, Reese Witherspoon. 

  • Favorite brunch food: I'm an egg girl, so I would say a sausage and egg quiche. I'm very much a lover of a hot breakfast.

  • Top thing on my bucket list: There are so many things...number 1 would be attend a Duke/UNC game in Cameron Indoor Stadium.

  • Three people I'd love to have dinner with: Kate Middleton, Coach K, and there are so many people vying for the number 3 spot!!

  • My favorite sandwich, plus fixings: Buffalo chicken on a tortilla with lettuce, tomato, and blue cheese crumbles. Top it off with a side of fries, and ranch dressing.

  • The first band I saw in concert: Bon Jovi. December 2005. I've been hooked ever since.

  • The best concert I've ever seen: Celtic Thunder put on a pretty incredible show, and Bon Jovi never disappoints. They rock out the whole time. You definitely get your money's worth.

  • My favorite "bad" movie: (meaning language and R rating) The Hangover. I didn't want to like it...but I do.

  • The last book I read: The Promise of an Angel by Ruth Reid. I love reading Amish books, blame it on me living close to them!

  • My most treasured fashion accessory: A gold cross my parents gave me. I am an open heart surgery survivor and they gave it to me very shortly after I had the surgery. I never take it off.

  • Saturday mornings you'll find me: On the couch watching the Pioneer Woman, with my mouth watering from all of the delicious food she makes.

  • People would be surprised to know that: My mind is full of useless information. Need a random factoid about something? I'm your girl.
I created this blog to share with you a few of my favorite things, sports, beauty, and life. In reading it, I hope you will learn something new, and gain a smile while reading this blog.  Nice to meet you!

Cooking for a Crowd: Spaghetti Sauce

My family likes to save money when we have parties. One way to do so is to cook everything ourselves, instead of hiring a caterer. Today, I wanted to give you a recipe for spaghetti sauce that will feed a crowd. This recipe is best made in an 18 quart roast pan. We bought most of our sauces and tomato paste at Costco. Ingredients: 2 onions 3 cans diced tomatoes 2 #10 cans of tomato sauce 1 #10 can on spaghetti sauce 1 heaping tsp of garlic minced 2 (28 oz) cans of crushed tomatoes 4 (6 oz) cans of tomato paste 1 tsp sugar Onion and garlic salt, italian seasoning, parsley, oregano to taste 1 pound of each: ground meat, hot and sweet sausage Look at the deliciousness!  In a skillet brown your meat and sausage in a little oil. Once browned place off to the side. Combine your onions, garlic, diced tomatoes, and crushed tomatoes. *Sweat your onions down first, then add the garlic. High Five for Friday

Friday is here again! It is always a wonderful way to bring in the weekend. Here is what I loved this week. 1. I made another visit to Freedom Farms. I bought some apples, and bread. 2. I absolutely loved my Birchbox and Ipsy bags this month! The Ipsy review is coming tomorrow! 3. I am subbing today and I got to wear my jeans to school. I love days like that. 4. I just want it to be Christmas, because I have some amazing posts for you already planned out! 5. I discovered that McDonald's iced coffee with caramel is AMAZING! Thanks, Lauren for the link up! Christmas/New Year's Recap

First, I just want to say that I have absolutely no pictures from Christmas. I'm terrible, I know. In my defense, I was sick all through Christmas and just wasn't feeling "it." I do however, have pictures of some of the gifts I received and New Year's. Christmas Eve dinner was hosted by my parents and I. We had lasagna, wedding soup, salad, bread, and Italian butter. I made a homemade alfredo sauce to go along with the lasagna. I also made the Italian butter, and attempted to make my homemade French bread. This year, the bread did not turn out. For dessert, I made white chocolate raspberry shooters. They were SO good! I will do a recipe on those when I make them again! After everything was cleaned up, we honestly just relaxed. I would have liked to have gone to Christmas Eve service at our church, but I was coughing, clearing my throat every 5 minutes, and blowing my nose every 10. I was a hot mess.
