Memorial Day Weekend Recap

Three day weekends are just the best. Any chance I get to eat good food, hang out with my family, and not have to go to work are big pluses! This weekend, I did just that!

Friday, I indulged in my own version of Happy Hour. A Dunkin Donuts iced coffee, and Sabra hummus was on the "menu" for me. For dinner that night, it was family pizza night, and my mom made 4 different kinds. I was starving and did not get any pictures, but she made bbq chicken, vegetable, sausage and peppers, and pepperoni. Trust me when I say it was delicious!

Saturday was the perfect Pennsylvania day. There was not a cloud in the sky, so I took advantage of that and worked on my tan. I was craving some buffalo chicken dip, so I made a skinny version! You could not tell it was a lightened up version at all! I will be posting a recipe soon!

Later that evening, it was time for the annual pictures by the rhododendron bushes. I have been doing this for as long as I can remember. My mom was the photographer, and we had some hits, and misses with the photos, so I think there will be a round two with a change of outfits!

Sunday was all about relaxation again. I worked on my tan, and helped my parent's get out our lawn furniture. Then my great grandpa took us out to dinner. We went to a restaurant we haven't been to in a while, and we were reminded of how good the food was there! I got a Cajun turkey sandwich on jalapeno wheat bread, and it was absolutely delicious! It had brown sugar bacon and cheddar cheese on it as well. You can't go wrong with anything that involves bacon and cheese. Am I right?!

Monday, my aunt hosted the Memorial Day picnic. The traditional fare was served, hot dogs, baked beans, cheesy potatoes, the usual. Every last bite was delectable! It was a good thing I went two miles on the treadmill that morning!! Check my Instagram for photos from Monday! We visited my grandparents, and I came home and got a few things ready for the week ahead. The only thing between me and Summer is 5 1/2 work days! Two this week, and three and a half next week. So, so pumped for that!

Cooking for a Crowd: Spaghetti Sauce

My family likes to save money when we have parties. One way to do so is to cook everything ourselves, instead of hiring a caterer. Today, I wanted to give you a recipe for spaghetti sauce that will feed a crowd. This recipe is best made in an 18 quart roast pan. We bought most of our sauces and tomato paste at Costco. Ingredients: 2 onions 3 cans diced tomatoes 2 #10 cans of tomato sauce 1 #10 can on spaghetti sauce 1 heaping tsp of garlic minced 2 (28 oz) cans of crushed tomatoes 4 (6 oz) cans of tomato paste 1 tsp sugar Onion and garlic salt, italian seasoning, parsley, oregano to taste 1 pound of each: ground meat, hot and sweet sausage Look at the deliciousness!  In a skillet brown your meat and sausage in a little oil. It's Been Awhile...

 Hi! Do you remember me and this little blog? I've been thinking about starting this blog back up again, and I am just going to jump in with both feet and go for it! In the past what, 4 years since the last post, I have learned a lot, and have a lot to share! YouTube-a-palooza

*Warning: this will be a long post, and picture heavy!*  :) Strictly based on the title alone I should have caught your attention! Sunday was the Alex Goot concert. It was at bar in Pittsburgh, and there were about 5 acts to the show!  You definitely got your money's worth! I went with my cousin, Allie (you can find her blog here! ) and it was just a fun girls night! The show was in a bar which used to be an old church, so it was very pretty inside. We got there around 6,  parked, and only had to stand in line for 10 minutes before we got to go inside. When we went in, we got our tickets scanned and  BAM , there was Landon Austin and Luke Conard at their merchandise table. So, because I somehow gained oodles of confidence*, Allie and I went over and I said "Hi Landon!"  He said "hi" back and asked me my name. I had a card for him so I handed it to him and he asked if he should open it now or later. I said that it was up to him. We moved on to Luke Conar
