Brunch Egg Casserole

This post is for my cousin Melinda. She loves the recipe blogs, so this one should be right up her alley! Side note, her room for Bible school was right next door to ours, and her decorations and food were the cutest! She made her kiddos corn dogs! I mean, best VBS teacher ever, right!? Even more importantly, she had 3 kiddos give their lives to Christ! Isn't that just the best?!

You just might want to make this recipe tonight and then pop it in the oven on Saturday morning. This casserole might have replaced the one I make on Christmas day. (I'll blog about that one too one day!) This dish has one unusual ingredient, but it should be readily available where you are. As usual, my thoughts and additions are in italics!


Brunch Egg Casserole

Ingredients:

2 cups unseasoned stuffing cubes or croutons
1 cup shredded cheddar cheese (I never measure, and just eyeball!)
4 large eggs lightly beaten (I added 5!)
2 cups whole milk (I used 2% and an extra splash if you use 5 eggs)
1/2 tsp salt
1/2 tsp ground mustard (No biggie if you don't have this!)
1/8 tsp onion powder
Dash pepper

4 bacon strips cooked and chopped

So when I made my casserole, I added 2 Jones sausage patties and no bacon. I also added in some leftover Canadian bacon, and leftover fried potatoes. Go big or go home. 

Directions:

Grease a 9x13 pan. Place croutons or bread cubes on the bottom. Sprinkle with cheese. Combine eggs, milk, and seasonings and pour over cheese and bread cube mixture. Next add your meat.

You can either let this sit overnight in the fridge, or bake it right away. If you bake right away, it goes in a 325* oven for 45-55 minutes. If you are letting it sit overnight, start with a cold oven! Depending on your oven temp, it may take more or less time.

I left mine sit overnight and let the flavors mesh together, and it was perfect! I also threw another little handful of cheese on top before I stuck it in the oven!

High Five for Friday

Friday is here again! It is always a wonderful way to bring in the weekend. Here is what I loved this week. 1. I made another visit to Freedom Farms. I bought some apples, and bread. 2. Christmas/New Year's Recap

First, I just want to say that I have absolutely no pictures from Christmas. I'm terrible, I know. In my defense, I was sick all through Christmas and just wasn't feeling "it." I do however, have pictures of some of the gifts I received and New Year's. Christmas Eve dinner was hosted by my parents and I. We had lasagna, wedding soup, salad, bread, and Italian butter. I made a homemade alfredo sauce to go along with the lasagna. I also made the Italian butter, and attempted to make my homemade French bread. This year, the bread did not turn out. For dessert, I made white chocolate raspberry shooters. They were SO good! I will do a recipe on those when I make them again! After everything was cleaned up, we honestly just relaxed. I would have liked to have gone to Christmas Eve service at our church, but I was coughing, clearing my throat every 5 minutes, and blowing my nose every 10. I was a hot mess.
