My Car Accident

Where do I start on this blog post? On January 10, 2018 I was involved in a car accident. I was stopped at a red light with my left turn signal on, the light turned green, and I proceeded through with my left hand turn and was t-boned/side swiped by another driver who ran their red light. My car was completely facing the opposite direction, and in the middle of traffic. The other car was drivable, but my car ended up being totaled. That day, the only injury I had was a brush burn on my head, and some pain in the back of my shoulder from hitting the back of the seat. The rest of the day I felt fine, but knew that the worst was yet to come.

The next day I woke up in terrible pain. I could not move my neck at all, and my back was in constant spasms. I could not stand for more than 20 minutes without my back spasming. I alternated ice and heat, and called my chiropractor to schedule an appointment for that following Monday. She did not want to even touch my neck, and didn’t touch it for a good month and a half. My back spasms improved, but it was such a slow process. I ended up missing so much work due to this accident.

So that brings us to today. My neck issue still has not improved. I still can’t turn it more than a quarter to a half inch on my left side, and only slightly more on the right. I’ve been to physical therapy, I’ve tried massage, I’ve been with my chiropractor, I’ve undergone 2 cervical epidural injections. (I’ll post on those!) I’ve had a x-ray done, I’ve had an MRI. My MRI showed that I have 2 bulging discs on my c5, c6 and c6,c7 vertebra. I also have a hemangioma on my c7 that most people don’t get on their cervical spine. No one can truly identify the problem. I’m a conundrum.

I will tell you this, this whole neck issue has been, you guessed it! A REAL PAIN IN THE NECK! :) Honestly at this point, if you aren’t laughing, you’d be crying. Seriously! If you made it this far reading this post, you da real MVP. Like I said before, I will do a post on the cervical epidural injections, just in case anyone is reading this who is having them done wants to know what they are like. (Spoiler alert, they weren’t great, but they weren’t awful either.)

If I ever find an answer to my issue, you all will be the first to know. And let my experience be a reminder to wear your seatbelt and always make sure you do a double check at intersections!

Cooking for a Crowd: Spaghetti Sauce

My family likes to save money when we have parties. One way to do so is to cook everything ourselves, instead of hiring a caterer. Today, I wanted to give you a recipe for spaghetti sauce that will feed a crowd. This recipe is best made in an 18 quart roast pan. We bought most of our sauces and tomato paste at Costco. Ingredients: 2 onions 3 cans diced tomatoes 2 #10 cans of tomato sauce 1 #10 can on spaghetti sauce 1 heaping tsp of garlic minced 2 (28 oz) cans of crushed tomatoes 4 (6 oz) cans of tomato paste 1 tsp sugar Onion and garlic salt, italian seasoning, parsley, oregano to taste 1 pound of each: ground meat, hot and sweet sausage Look at the deliciousness!  In a skillet brown your meat and sausage in a little oil. Once browned place off to the side. Combine your onions, garlic, diced tomatoes, and crushed tomatoes. *Sweat your onions down first, then add the garlic. Then your tomatoes.* Open your tomato sauces and spaghetti sauces (w...

Vegetable Lasagna Recipe

I made this lasagna recipe, and I think my grandma declared it the best thing she's ever eaten. She kept going back to the dish, and cutting off a small slice. Each time she would say, "This is so good!" So, if only she liked it, my day was made. However, every member of my family loved this dish, and I know you will too! It is a perfect way to use up Summer vegetables, and enjoy a delicious meal! My comments are in italics!
