Mythology...Mythology...Mythology!

Celtic music, you can either take it or leave it. I've chosen to take it. Last March I was channel surfing, and happened along a young man singing a song called "Isle of Hope" on my local PBS Station. Initially, his attractive appearance caught my eye, (hey, I'm single, I can window shop!) but the song and stage presence drew me in. Turns out, that he was only one of a group of six individuals called Celtic Thunder.

Well, the obsession began! I can't even begin to tell you how many times I watched that PBS special. Thank goodness for tape recorders! I downloaded the songs, went on their website, (www.celticthunder.ie) and became hopelessly devoted to Ryan, Neil, Emmet, Keith, George, and now Colm. Fast forward to September when I went to my very first Celtic Thunder concert. In a word, it was FABULOUS! Their stage presence captivates you from the moment they step foot on the stage. Afterwards, I went to the stage door and waited for the lads to come out. They did, and I got my picture taken with Ryan and Colm, and the drummer Declan. (Neil, Keith, Emmet, and George...I'm coming for you next concert!) I can't begin to say how many friends I've made on Facebook from liking this group. As we all say, us Thunderheads stick together!

Mythology is the latest project for them. It's out TODAY! I can't wait to get my hands on the deluxe copy and play it over and over. Once I do, I'll do a blog on my favorite songs and what I think overall. I leave you with pictures of me and the lads!

Cooking for a Crowd: Spaghetti Sauce

My family likes to save money when we have parties. One way to do so is to cook everything ourselves, instead of hiring a caterer. Today, I wanted to give you a recipe for spaghetti sauce that will feed a crowd. This recipe is best made in an 18 quart roast pan. We bought most of our sauces and tomato paste at Costco. Ingredients: 2 onions 3 cans diced tomatoes 2 #10 cans of tomato sauce 1 #10 can on spaghetti sauce 1 heaping tsp of garlic minced 2 (28 oz) cans of crushed tomatoes 4 (6 oz) cans of tomato paste 1 tsp sugar Onion and garlic salt, italian seasoning, parsley, oregano to taste 1 pound of each: ground meat, hot and sweet sausage Look at the deliciousness!  In a skillet brown your meat and sausage in a little oil. High Five for Friday

Friday is here again! It is always a wonderful way to bring in the weekend. Here is what I loved this week. 1. I made another visit to Freedom Farms. I bought some apples, and bread. 2. I absolutely loved my Birchbox and Ipsy bags this month! The Ipsy review is coming tomorrow! 3. I am subbing today and I got to wear my jeans to school. I love days like that. 4. I just want it to be Christmas, because I have some amazing posts for you already planned out! 5. I discovered that McDonald's iced coffee with caramel is AMAZING! Thanks, Lauren for the link up! Christmas/New Year's Recap

First, I just want to say that I have absolutely no pictures from Christmas. I'm terrible, I know. In my defense, I was sick all through Christmas and just wasn't feeling "it." I do however, have pictures of some of the gifts I received and New Year's. Christmas Eve dinner was hosted by my parents and I. We had lasagna, wedding soup, salad, bread, and Italian butter. I made a homemade alfredo sauce to go along with the lasagna. I also made the Italian butter, and attempted to make my homemade French bread. This year, the bread did not turn out. For dessert, I made white chocolate raspberry shooters. They were SO good! I will do a recipe on those when I make them again! After everything was cleaned up, we honestly just relaxed. I would have liked to have gone to Christmas Eve service at our church, but I was coughing, clearing my throat every 5 minutes, and blowing my nose every 10. I was a hot mess.
