Apple Cider Bread Pudding Recipe

Doesn't the Fall weather just scream apples and bread pudding? I've never been a huge fan of bread pudding, probably because I am not a huge fan of custard. But this sounded delicious, and we had copious amounts of bread leftover from a party we cooked for. I found this recipe on Pinterest, of course!

Here's the recipe:

8 cups bread cubed
  • 2 medium apples, cored and cubed
  • 1/2 cup raisins
  • 4 large eggs
  • 1 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp freshly ground nutmeg
  • 1/4 tsp ground cardamom
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 3 cups milk
  • 1 cup apple cider

Preheat oven to 350F. Lightly grease a 9×13-inch baking dish.
In a very large bowl, combine bread cubes, apple cubes and raisins.
In another large bowl, whisk together eggs, sugar and all spices until well combined. Wish in milk and apple cider, then pour mixture over the bread cubes. Toss gently with a spatula until cubes are evenly coated. Let stand for 15 minutes.
Pour mixture into prepared pan and smooth into an even layer.
Bake for about 50 minutes, until bread pudding is puffed and lightly browned, and a knife inserted near the center comes out clean.
Cool for at least 15 minutes (pudding will sink slightly) before serving.
Store leftovers covered, in the refrigerator.

This recipe was absolutely delicious! It was that perfect homey, Fall dessert that hit the spot! I would definitely recommend this even if you aren't a fan of bread pudding. You will like this!

High Five for Friday

Friday is here again! It is always a wonderful way to bring in the weekend. Here is what I loved this week. 1. I made another visit to Freedom Farms. I bought some apples, and bread. 2. I absolutely loved my Birchbox and Ipsy bags this month! The Ipsy review is coming tomorrow! 3. I am subbing today and I got to wear my jeans to school. I love days like that. 4. Christmas/New Year's Recap

First, I just want to say that I have absolutely no pictures from Christmas. I'm terrible, I know. In my defense, I was sick all through Christmas and just wasn't feeling "it." I do however, have pictures of some of the gifts I received and New Year's. Christmas Eve dinner was hosted by my parents and I. We had lasagna, wedding soup, salad, bread, and Italian butter. I made a homemade alfredo sauce to go along with the lasagna. I also made the Italian butter, and attempted to make my homemade French bread. This year, the bread did not turn out. For dessert, I made white chocolate raspberry shooters. They were SO good! I will do a recipe on those when I make them again! After everything was cleaned up, we honestly just relaxed.
