Where I've Been Part 2

So if you saw yesterday's post, I recapped a little bit of February and March. Now I can get you caught up from then until now!

I was able to go to a Pittsburgh Penguins game! I always love going to the last game of the season. Even thought I didn't get a shirt off the players back! However, it was neat to see the Stanley Cup winning team before they hoisted the trophy. Plus, when you have seats 6 rows behind the glass, you don't say no!

The school I work at (still subbing!) had a local meteorologist come and give a presentation. It was a great assembly, and the kids really enjoyed it! I know I did!

In the mail one day, I got something from one of my
I mean, could JJ and I be any cuter?!
many celebrity boyfriends. (LOL!) I got this magazine full of pictures of JJ Watt. Listen, any time he comes in my mailbox, I'm not going to complain. ;)

Unfortunately, June was a crazy, and sad month. To start it off, my dad had a kidney stone, and he also got bit by a spider and ended up getting cellulitis because the bite got infected. Then, my aunt and grandpa passed away within 23 hours of one another. So those were a rough 2 weeks. I'm doing ok. I know that they are both in a better place, and they don't have to suffer anymore.

The one highlight of the month, was being a bridesmaid in my best friend's wedding! I was so thrilled to be a part of her special day. It is crazy to me to think that I've known both the bride and groom for 10 years! I am so happy for them, and can't wait to see what the future has in store for them!

That's what I've been up too! I have more weddings, and graduation parties to go to, and I'm in a wedding in September, so be on the lookout for many what I wore posts, and recaps of all these events!

Cooking for a Crowd: Spaghetti Sauce

My family likes to save money when we have parties. One way to do so is to cook everything ourselves, instead of hiring a caterer. Today, I wanted to give you a recipe for spaghetti sauce that will feed a crowd. This recipe is best made in an 18 quart roast pan. We bought most of our sauces and tomato paste at Costco. Ingredients: 2 onions 3 cans diced tomatoes 2 #10 cans of tomato sauce 1 #10 can on spaghetti sauce 1 heaping tsp of garlic minced 2 (28 oz) cans of crushed tomatoes 4 (6 oz) cans of tomato paste 1 tsp sugar Onion and garlic salt, italian seasoning, parsley, oregano to taste 1 pound of each: ground meat, hot and sweet sausage Look at the deliciousness!  In a skillet brown your meat and sausage in a little oil. Once browned place off to the side. Combine your onions, garlic, diced tomatoes, and crushed tomatoes. *Sweat your onions down first, then add the garlic. Then your tomatoes.* Open your tomato sauces and spaghetti sauces (w...

Vegetable Lasagna Recipe

I made this lasagna recipe, and I think my grandma declared it the best thing she's ever eaten. She kept going back to the dish, and cutting off a small slice. Each time she would say, "This is so good!" So, if only she liked it, my day was made. However, every member of my family loved this dish, and I know you will too! It is a perfect way to use up Summer vegetables, and enjoy a delicious meal! My comments are in italics! Vegetable Lasagna Ingredients: 1 container (15oz) ricotta cheese 1 egg 1 tsp Italian seasoning 1Tbls olive oil 2 cups zucchini shredded 1 red bell pepper chopped 1 pkg frozen chopped spinach thawed and squeezed dry 2 C French Fried Onions divided 3 cups prepared Alfredo sauce No boil lasagna noodles 2 C shredded mozzarella cheese divided 1/4 C grated Parmesan cheese Preheat your oven to 375 degrees.
