Bruschetta Chicken Bake Recipe

I cut this recipe off of a box of stuffing mix. I am SO glad I did! It is delicious, and easy to put together! I've said it before, but don't throw away the boxes to things because there are some great recipes on there!

I love bruschetta. It is quick to make, and tastes like you put a lot of time and effort into making it. So when I saw this bruschetta chicken bake recipe, I had to try it out! I love one pot meals!

Bruschetta Chicken Bake

Ingredients:
1 can diced tomatoes undrained
1 pkg stuffing mix for chicken
1/2 cup water
2 cloves garlic minced
1-1 1/2 pounds skinless chicken breasts cut into bite size pieces
1 tsp dried basil (I used fresh!)
1 cup shredded mozzarella cheese

To Make:




Preheat oven to 400*.

Mix tomatoes, stuffing mix, water, and garlic just until combined. Layer chicken, basil, and cheese in 3 quart (I used 9x13) baking dish. Top with the stuffing mix. Bake 30 minutes or until chicken is done.

*I probably let my casserole cook for 45 minutes. I have a paranoia with chicken and am so afraid of getting poisoned because it isn't done! Haha!

I made some Italian noodles to go with this dish. All I did was boil some farfalle, mix in a little butter, a garlic clove, some Italian dressing, and Parmesan. I topped it with some fresh garden basil. Quick and easy!

High Five for Friday

Friday is here again! It is always a wonderful way to bring in the weekend. Here is what I loved this week. 1. I made another visit to Freedom Farms. I bought some apples, and bread. 2. I absolutely loved my Birchbox and Ipsy bags this month! The Ipsy review is coming tomorrow! 3. I am subbing today and I got to wear my jeans to school. I love days like that. 4. Christmas/New Year's Recap

First, I just want to say that I have absolutely no pictures from Christmas. I'm terrible, I know. In my defense, I was sick all through Christmas and just wasn't feeling "it." I do however, have pictures of some of the gifts I received and New Year's. Christmas Eve dinner was hosted by my parents and I. We had lasagna, wedding soup, salad, bread, and Italian butter. I made a homemade alfredo sauce to go along with the lasagna. I also made the Italian butter, and attempted to make my homemade French bread. This year, the bread did not turn out. For dessert, I made white chocolate raspberry shooters. They were SO good! I will do a recipe on those when I make them again! After everything was cleaned up, we honestly just relaxed.
